Rob and his wife, Melissa, revived the art of maple sugaring in 1992 with 13 taps and mom’s kitchen stove. Today, Ioka Valley Farm has more than 10,000 taps and two modern boilers housed in the sugar house, built especially for production of the sweet treat. In the spring of 1997, they converted the
farm’s calf barn into the “Calf-A,” serving pancake meals with their
own maple syrup during the sugaring season.
Ioka Valley Farm’s Sugar House is open to visitors whenever we are
boiling, mid-February through early April.

The maple tree is “tapped” and the pipelines collect the sap and bring it to the sugar house. Many lines are strung to connect and collect sap from all the maple trees.
Spring Maple tap lines are run and maintained in all types of weather. Sometimes there’s snow…
…and sometimes there’s not.
Does all the maple sap go in there? Checking the boiling maple sap to make sure it’s “just right.”
Our maple syrup is also used over pancakes
and waffles in the Calf-A.
